We love food here at Eoswellbeing and we are very excited to share our first recipe blog with you! We have teamed up with the lovely Helen from Helen's Kouzina who has kindly shared her delicious recipe Olive Bites in under 20 Minutes with us. Helen is a passionate Greek chef who has featured on My Kitchen Rules and has her own cooking segment on Meraki TV. I am Helen Demetriou, also known as Lenya! As an Australia born Greek Cypriot, the Greek cuisine is very close to my heart.
At a young age, I was always intrigued by the chemistry of cooking, the flavour combinations and how I could cut corners to make things simple.
My mother was an incredible cook, and I often aspired to be the greatness that she was and that one day, I too would bring a joy to every meal I made, as she did for family and friends.
At 16, we had the crushing news that she had terminal cancer, and from that day I knew I had to try and replicate her great dishes. These dishes were all placed in my memory bank, I had never written any recipe from her, but I watched her closely and I taste tested every step of the way.
Over the years, I would research many more recipes and handpick what I thought were the best version, and more importantly preserve our Greek heritage style cooking in a simplified way.
In 2012, I was fortunate enough to be selected along with my older brother Steve on My Kitchen Rules, what an adventure that was! We made most Greeks proud with our weekly home kept recipes and even made it to the final 5.
I now have a small cooking segment on the foxtel series of Meraki TV, Helenskouzina, Greek meals under 30 mins. The inspiration for this was to inspire young Greek Australians to carry on the legacy of our fantastic cuisine, and to not be afraid of those daunting dishes that our mothers and grandmothers made with ease.

Olive Bites in under 20 Minutes
2 cups pitted and diced olives
1 red onion finely chopped
1 heaped tablespoon dried mint
Sesame seeds to garnish
3 cups of self raising flour
1 cup light olive oil
1 cup fresh orange juice
Combine all the dough ingredients and mix by hand until the dough comes together. It will be moist and does not require more than 5 minutes of kneading.
It doesn’t even need to rest! It’s ready to go.
In a small bowl combine 2 cups of pitted and diced olives, 1 red onion finely diced, 1 heaped tablespoon of dried mint.
Roll a small tablespoon full of dough in your hand, flatten with your palm, place olive mixture in the centre, gently fold over the dough to close your olive bites.
Garnish with sesame seeds and bake for 10 mins on 180 degrees.
This recipe will yield 25, and can be frozen for future hunger spikes 😇
